    Cheese & Carrot Dog MuffinsWe would like to share one of our delicious doggie muffin recipes with you as we know that many of you like to have a go at baking something nice for your dog.

    These cheese and carrot muffins are fairly easy to make and gluten free so great for dogs with sensitive tummies. They go like hot cakes when we sell them at shows and markets. Dogs just love them...the crumbs are proof!

    Ingredients

    Makes 6 muffins

    • 150g (5oz) rice flour
    • 50g (2oz) good quality grated cheddar cheese (we use Farmhouse cheddar)
    • 150g (5oz) grated carrots
    • 2 tablespoons dried parsley
    • 1 teaspoon garlic powder
    • 1 heaped teaspoon gluten free baking powder
    • 2 free range eggs
    • 100ml (4 fl oz) milk

    For the topping:

    • a little extra grated cheddar
    • Sunflower seeds

    How to make our Cheese & Carrot Doggie Muffins:

    • Preheat the oven to 180C (350F/gas 4).
    • Put the rice flour and baking powder in a bowl. Beat the eggs lightly, add the milk and stir. Add the milky, eggy mixture tot he flour and combine. It should have the consistency of a thick batter.
    • Then add all the other ingredients and mix well.
    • Spoon the mixture in greaseproof muffin or cupcake liners, alternatively straight into a greased muffin tin. The mixture should fill about 3/4s of each hole or cupcake liner.
    • Then top each muffin with a little grated cheddar and sprinkle a few sunflower seeds on top.
    • Transfer to the preheated oven and bake for 25-30 minutes until light golden brown on top and firm to the touch.
    • Remove them from the oven and leave on a wire rack to cool before giving them to your dog...and watch them enjoy!
